Citation: At approximately 07000 hours on October 11, 2011, I performed the pre-operational sanitation procedures in the slaughter& processing floors and observed the following non compliances: In the slaughter floor, in the polisher machine, I observed multiple fat particles approximately 2cm. in diameter on the side away from the Singer. I showed all of the non compliance to Ms. [redacted] the QC manager& she proceeded to have the clean up crew reclean those areas. I did not apply any regulatory control action, because the plant cleaned the affected area immediately.
