Citation: On September 22, 2011 at approximately 1530 hours, while performing the procedure 03J02 I found the following non compliance: while checking the carcasses at the area after the inspection line and before the final wash (chad cabinet) for zero fecal tolerance I found two roasters with fecal material inside the head very close to the mandibular lymph nodes and it was yellowish in color and about 3 cm. in diameter. The plant failed to do any corrective action and was not able to determine the deviation from the CCP as mentioned in the establishment HACCP slaughter plan which says every carcass has to be zero fecal tolerance. [redacted] the QC personnel was notified of the non compliance. I took a regulatory control action and stopped the line and told the trimmer to trim all of contaminated parts in the carcass. You are in violation of 9CFR 417.3(a) (1) which states that the written HACCP plan shall identify the corrective action to be followed in response to a deviation from a critical limit. The HACCP plan shall describe the corrective action to be taken, and assign responsibility for taking corrective action, to ensure the cause of deviation is identified and eliminated.
