Citation: On August 22, 2011 at approximately 11.30 A.M, when I was in the kill floor, inspector [redacted] called me, because she noticed the water used in the establisment was dirty&not eligible to be used on a meat product. Inspector [redacted] did a regulatory control action& she stopped the inspection line as soon as she noticed the water was dirty& I confirmed with her that she must stop the inspection line every time she notices the water is dirty. I also made sure that no product was adulterated, so there was no need to do further corrective actions. I also went after I stopped the line to the water supply room to make sure the well water supply is closed, which was the cause of the dirty water& I saw [redacted] Jr, the plant manager closing the main well water supply. [redacted] the QC Manager was notified of the non compliance. You are in violation of 9 CFR 416.1, which states " Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated". And also 9 CFR 416.2(g)(1) which states a supply of running water that complies with the National Primary Drinking Water Regulations at a suitable temperature and under pressure as needed, must be provided in all areas where required. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(g)(1) Water supply and water, ice, and solution reuse. A supply of running water that complies with the National Primary Drinking Water regulations (40 CFR part 141), at a suitable temperature and under pressure as needed, must be provided in all areas where required (for processing product, for cleaning rooms and equipment, utensils, and packaging materials, for employee sanitary facilities, etc.). If an establishment uses a municipal water supply, it must make available to FSIS, upon request, a water report, issued under the authority of the State or local health agency, certifying or attesting to the potability of the water supply. If an establishment uses a private well for its water supply, it must make available to FSIS, upon request, documentation certifying the potability of the water supply that has been renewed at least semi-annually.
