Violation: 416.13(c), 416.4(a), 416.4(b)

Citation: On June 8, 2011 at approximately 0650 hours, while performing ISP procedure code 01B02, pre-operational sanitation, the following noncompliances were observed. There were multiple fat particles ranging in size from 1-2 cm on the rotating plastic spoked feed wheel of the Townsend skinner. There were multiple small (3-5mm) fat particles on the underside of the framework of the large band saw. On the slaughter floor, there were several small (5-7mm) fat particles and hair on the inner portion of the side walls of the polisher. [redacted] QC, was notified of the noncompliance. No regulatory control action was taken because the plant took immediate action to clean and sanitize the items under my direct supervision. Sanitation records were not available for review. The establishment is not complying with 9CFR 416.1, 416.4(a)(b) and 416.13(c). Refer to previous similar NR 0028-2011-16459 dated 5-26-11. Previous preventive measures were ineffective or were improperly implemented to prevent recurrence. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
