Citation: On May 5, 2011 at approximately 0655 hours while performing Pre-Operational Sanitation inspection, but after the plant had performed theirs, I observed the following noncompliance: 1) In the cut room: the ceiling along the east wall above approximately 5 combo bins had beaded condensation, the ceiling along the west wall and above one combo bin had beaded condensation, the ceiling in front of the north wall had beaded condensation. 2) In the slaughter floor: the ceiling of the blood collection room and the ceiling area next to the stomach wash had beaded condensation. No regulatory control action was taken because all the condensation was removed in my presence. [redacted] QC, was informed of this noncompliance. The establishment is not in compliance with 9 CFR 416.1 and 416.2(d) .

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
