Citation: On March 7, 2011 at approximately 0930 hours, while performing procedure 03J02, I observed the following noncompliance. In reviewing HACCP records for the previous week, from 2/28 to 3/4, it was noted that the verification activities involving direct observation of monitoring of blood saving disposition, on HACCP form 006, was not done for that week. Upon questioning [redacted] about this situation she said that the direct observation was performed on 3/4/11 but that it wasn't recorded. The establishment's HACCP plan states that [redacted] Ms. [redacted] was, QC, was notified of this noncompliance. The establishment is not in compliance with 9 CFR 417.5(a)(3) and 9 CFR 417.5(b) .

Regulation:

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
