Citation: On 11/15/10 at approximately 1400 hours, while reviewing SSOP records from the previous week as part of scheduled ISP procedure code 01B01, the following noncompliance was observed. On the Pre-op SSOP Record (USA-SSOP-Form-001) for the dates 11/9/10 and 11/12/10, records are incomplete. On 11/9/10 the Chad cabinet Shower was marked with an X indicating it was rejected as being unsanitary but there was no description of the deficiency and no SSOP corrective actions documented. On 11/12/10 the Stomach Washer was rejected as unsanitary and the deficiency was documented and described as "fat residue" but there was no documentation of reinspection and no SSOP corrective actions were documented. [redacted] QC, was notified of the noncompliance. The establishment is not complying with regulations. 9CFR 416.15(a) states "Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishment's Sanitation SOP's or the procedures specified therein, or the implementation or maintenance of the Sanitation SOP's, may have failed to prevent direct contamination or adulteration of product(s)." 9CFR 416.16(a) states "Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP's and any corrective actions taken." Refer to previous similar NR 0048-2010-13030 dated 8/31/10. Previous preventive measures were ineffective or were improperly implemented to prevent recurrence. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

416.15(a) Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishmentís Sanitation SOPís or the procedures specified therein, or the implementation or maintenance of the Sanitation SOPís, may have failed to prevent direct contamination or adulteration of product(s).
