Citation: At approximately 0650 on this date I performed preoperational procedures in the slaughter and processing area's and observed the following noncompliance's. In the #2 dehairing machine I observed multiple hairs, tmtc, on the upper beam, lower platform and multiple paddles. I observed [redacted] rehose this area, reinspected it and found it acceptable. At the inspection station I observed the hot water pipe had bone and meat particles, tmtc, on the upper 4 feet. I showed this to Jackson and he proceeded to have the cleanup crue reclean this area. In the cut room I observed [redacted] meat pieces approximately 1/8X1/4" under the moving table of the large saw. This I had also observed reclean. There were no tags issued because I directly observed the recleaning. You are in violation or regulations 9CFR416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP's before the start of operations. 9CFR416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 9CFR416.(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
