Citation: At approximately 1120 hrs on this date I was helping Dr. [redacted] perform dispositions and I noticed in the middle cooler dripping condensation on the rails and door ways due to a high amount of humidity. I notified [redacted] of this deficiency and he immediately started to wipe down the rails and door ways. This is in violation of regulations 9CFR416.1 which states " Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated." and Regulation 9CFR416.2(d) Which states "Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided." This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: Condensation. NR: 37-2010 dated 7/12/2010

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
