Citation: On Thursday, April 26, 2012 during the performance of a Sanitation Performance Standard Verification Task observed the following Noncompliances. 1) Observed numerous amounts of cobwebs throughout the barn area. 2) Staging area for Electric Stunning and inedible unloading area, observed residue of manure and blood splattered on the walls and doors leading to the inedible room and slaughter department. 3) Chill Cooler, at the carcass rail interchanges, four blue plastic covered wires used for changing rail direction, plastic cut, torn and wire ends are frayed and exposed. Carcass retain cage, observed product residue and a black mold like residue on the orange colored plastic mesh and a dark discoloration of residue on the white plastic pvc piping. 4) Kill Floor, at the carcass rail interchanges, two blue plastic covered wires used for changing rail direction, plastic cut, torn and wire ends are frayed and exposed. 5) Kill Floor, suspended water lines at the final rail, the two water control levers were observed to be rusted. 6) Kill Floor, Main electricl panel box, observed cobwebs inside the wall cabinet. 7) Kill Floor, overhead yellow hoist next to the legging station, observed rust and peeling paint. Informed [redacted] Plant President of the noncompliances verbally and informed [redacted] Plant Vice President of the noncompliances in writing with this Noncompliance Record.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
