Citation: On Wednesday, April 18, 2012 observed the following Noncompliances during the performance of a Sanitation Performance Standard Verification Task. 1) Spice room, no lighting observed in the room, observed open containers of spices, a box of spices and box of netting directly on floor, observed rust on the metal sliding door and three rusted support brackets for the shelf located to the right of the entrance. 2) Cutting Room, 2ft. x 4ft. light fixture directly above the band saw, light bulbs do not have a protective covering and observed rust on the light fixture housing. 3) Grinding Cooler, 8ft. light fixture above the grinder not working and the light fixture housing is showing signs of rust. Observed product residue build up on the grinder electric plug end and product residue build up along with rust on a plug end of a yellow extension cord near the back of the grinder. 4) Grinding Cooler, 2ft. x 4ft. light fixture at the center of the room showing signs of rust on the light fixture housing. Cuber and Pattie Machine observed a build up of product residue on electric cord ends. Informed [redacted] Plant President of the noncompliances verbally and informed [redacted] Plant Vice President of the noncompliances in writing with this Noncompliance Record.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
