Citation: On Tuesday, April 10, 2012 at approx. 1230 hours during the performance of a Sanitation Performance Standard VerificationTask observed the following Noncompliances. 1) Lunchroom, at the entrance doorway, the frame for the door is not secured and sealed properly to the wall exposing large gaps around the perimeter of the frame. 2) Lunchroom, observed numeruous dead insects within the two ceiling lights and cobwebs throughout the room. 3) Restroom in lunchroom, shower support wall behind the toilet peeling white paint, wall panel not secured properly to the studs, upper left corner of shower wall broken exposing studded wall. 4) At the bottom of the staircase leading to the lunchroom and upstairs offices, an area of the drywall in the upper right corner (hinge side) of the ceiling broken creating a void in the ceiling. 5) Kill Floor, sliding door leading to the Smokehouse department, the 2 piece door panel is not sealed along the right side exposing a wooden material between the panels. Door frame on the the bottom right side on the Smokehouse department side pulled away from the wall, not secured properly. 6) Chill Cooler entrance, a five foot section of the door stop framing along the closing side towards the top, loose not properly secured and sealed. Observed loose caulking, voids and gaps along the door frame interior and exterior. Informed [redacted] Kill Floor Supervisor of the noncompliances verbally and informed [redacted] Plant Vice President of the noncompliances in writing with this Noncompliance Record.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
