Citation: On Thursday, May 26, 2011 at approx. 0910 hours observed the following noncompliance with Sanitation Performance Standards on the Kill Floor during the performance of Inspection System Procedure (ISP) 06D01. 1) Large electrical panel box, the bottom of the cabinet and side covering not secured/sealed properly, exposing gaps. 2) Two holes approx. 1 1/2" in diameter in the ceiling between legging station and cooler door. 3) Loose black electrical tape approx. 5 to 6" in length hanging from pipes along the ceiling, one piece at the entrance and two located at the far left corner. 4) Bottom right corner of the knocking pen, approx. 3" x 5" hole partially filled with a spray foam insulation observed to be collecting product residue within the area. 5) Counter balance weight for the carcass splitting saw, top of the weight is cracked exposing a gap around the weight, on the top, the cylindrical white pvc pipe was not sealed properly observed product residue from previous production throughout the pipe. 6) At the entrance way to the Holding Cooler, ceiling area near the carcass rail damaged, missing trim molding. 7.) At the entrance way to the Chill Cooler, lower left corner of inside framing loose/not secured properly to wall exposing a gap. Informed [redacted] Kill Floor Supervisor of the noncompliance's verbally. Mr. [redacted] Plant Vice President was additionally informed in writing with this Noncompliance Record.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
