Citation: On Wednesday, September 8, 2010 at approx. 0815 hours observed the following noncompliance with Inspection System Procedure 06D01. 1) Carcass Chill Cooler, observed water pouring out of the overhead refrigeration unit while on a defrost cycle in the right corner of the drip pan. The refrigeration unit drain line is located in the center and it appeared that the drip pan was not secured properly in place (missing screws) in order for the water to drain properly in the center. 2) Carcass Chill Cooler, ceiling area to the left of the overhead refrigeration unit, a section of the drop ceiling approx. 16" in length x 4" wide is missing. 3) Carcass Chill Cooler, observed flaking rust on the carcass rails and support braces throughout the cooler. Informed [redacted] Kill Floor Supervisor of the noncompliance's verbally. Mr. [redacted] Plant Vice President was additionally informed in writing with this Noncompliance Record.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
