Citation: A Food Safety Assessment was conducted at Est. 17996 by Mr. [redacted], EIAO. An entrance meeting was held on 05/08/12 and an exit meeting was held on 06/12/12. During this FSA, the following noncompliance was noted: the establishment conducts Generic E. coli testing as per 310.25(a)(v) for very small volume plants. Ely Pork Products slaughters only swine species. In reviewing the 13-week, Generic E. coli testing results for 2011 from June 06, 2011 to September 21, 2011, the results for the first three tests dated 6-10-11, 6-15-11, and 7-13-11 are analyzed utilizing AOAC method 991.14, which is an acceptable sponge swab for Generic E. coli testing. However, the following 10 results from 7/20/11 to 9/21/11 are analyzed utilizing AOAC method RI 020801, which is an approved test method for E. coli O157:H7 that is a pathogen associated with bovine species. The establishment completed only three valid Generic E. coli tests for the calendar year 2011. This does not meet the regulatory requirements of 9 CFR 310.25(a)(3).
Mr. Dwight Ely, Owner/Operator, was notified of the noncompliance and failure to meet 9 CFR 310.25(a)(3).

310.25(a)(1) Criteria for verifying process control; E. coli testing. Each official establishment that slaughters livestock must test for Escherichia coli Biotype 1 (E.coli) Establishments that slaughter more than one type of livestock or both livestock and poultry, shall test the type of livestock or poultry slaughtered in the greatest number.
