Violation: 417.2(a)(2), 417.5(a)(2)

Citation: A Food Safety Assessment was conducted at Est. 17996 by Mr. , EIAO. An entrance meeting was held on 05/08/12 and an exit meeting was held on 06/12/12. During this FSA, the following noncompliances were noted in the Pork Slaughter HACCP Plan:
1.) The slaughter flow chart identifies a step “bleeding” which is not identified in the hazard analysis. This does not meet the regulatory requirements of 9 CFR 417.2(a).
2.) The slaughter HACCP plan identifies a CCP for zero tolerance for fecal, but fails to support the frequency of monitoring of this CCP. This does not meet the regulatory requirements of 417.5(a)(2).
Mr. Dwight Ely, Owner/Operator, was notified of the noncompliances and failure to meet 9 CFR 417.2(a) and 417.5(a)(2).

Regulation:

417.2(a)(2) A flow chart describing the steps of each process and product flow in the establishment shall be prepared, and the intended use or consumers of the finished product shall be identified.

417.5(a)(2) The written HACCP plan, including decisionmaking documents associated with the selection and development of CCP’s and critical limits, and documents supporting both the monitoring and verification procedures selected and the frequency of those procedures.
