Citation: On 04/17/2012 at approximately 0800 hrs, I performed Pre-Op SSOP Review and Observation. This inspection task was performed after the establishment's pre-operational sanitation inspection and prior to production. During my inspection, the following noncompliance was noted in the slaughter area: an accumulation of dried/encrusted product residue from previous days' operation was noted on the underside framework and legs of the product work table. This is a non-product contact surface; however, the product residue from previous days' operation creates an insanitary condition.

Mr. Dwight Ely, Owner/President, was notified of the noncompliance, insanitary condition, and failure to meet the Meat and Poultry Regulation 416.4(b).

A review of the establishment's pre-operational sanitation records produced on 04/17/2012 indicated that the equipment located in the slaughter area was found to be acceptable by the establishment.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
