Citation: On May 03, 2011 at approximately 0800 hrs, I performed Pre-Op SSOP Review and Observation. This procedure was performed after the establishment's pre-operational sanitation inspection and prior to production. During my inspection, the following noncompliance was noted in the USDA product cooler: multiple small particles of meat/fat, ranging in size from approximately 1/8" and smaller, and numerous thin layers of dried meat/fat juices were noted on the inner door and wall of the cooler. These small particles of meat/fat and dried meat/fat juices from previous days' operation, located in an area where product is handled and stored, create an insanitary condition.

Mr. Dwight Ely, Owner/President, was notified of the noncompliance, insanitary condition, and failure to meet the Meat and Poultry Regulation 416.2(b)(2).

A review of the establishment's pre-operational sanitation records produced on 05/03/11 indicated the establishment found the cooler acceptable during their inspection.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
