Citation: While performing a 06D01, Sanitation Performance Standards task, I noticed the following deficiencies that are not food contact surfaces, but do create insanitary conditions within the establishment. 1. A dried of build-up of blood and fat particles on storage room cooler floor. 2. The folding metal doors separating the cooler in the processing area have a blood residues and brownish color residues across the bottom half of the door. 3. The lower edge of door to the electrical room has rust build-up on it. 4. The metal doors separating the slaughter floor and the back unloading dock have a brownish color residue build-up on it, also the white strip between the metal doors has a dark color residue over it. 9 CFR 416.4 (b) states: Non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and adulteration of product. 9 CFR 416.1 states: Each official establishment must be operated in maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. I notified Mr. [redacted] of these deficiencies and that this record serves as notification that failure to comply with regulatory requirement could result in additional regulatory or administrative action.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
