Citation: While performing an unscheduled 01B02, Pre-Operational sanitation task, I found that the cooler hand release latch had a slight fat build-up on the inside white plastic where one would put their fingers, thus contacting the residue. This latch is on the door leading to the slaughter floor. 9 CFR 416.4(a) states: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. The plant had not yet filled out their SSOP checklist. I notified plant management of this deficiency and that this serves as written notification that failure to comply with regulatory requirements could result in additional regulatory and/or administrative action.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
