Citation: While performing an unscheduled 06D01, Sanitation Performance Standards task, I noticed the following deficiencies that are not a food contact hazard but do create an insanitary condition within the plant environment. 1. The carcass washstand had protein residue on the right underside, inside frame bracket near the bottom. 2. There are cobwebs attached to the west wall and ceiling in the corner behind the knocking box leading out to the ante-mortem pens. 3. The rubber seal on the cooler door leading from the slaughter floor into the carcass cooler has approximately a 3 inch tear in the area below the door handle that is exposing the insulation from the seal. No carcasses can come in contact with the exposed material. 4. The maintenance room located through the double doors, outside of the slaughter area, is very cluttered with machinery, parts and various cleaning items on shelves and on the floor. The door bottom and the right side door frame is rusty. 9 CFR 416.4(b) states: Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. Plant management was notified of these deficiencies and that this serves as written notification that failure to comply with regulatory requirements could result in additional regulatory and /or administrative action.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
