Citation: At 0705 hours while performing the review and observation portion of the SPS routine activity the following noncompliances were observed. Dried blood and splatter were observed on the wall above the sink in the restroom area at the entrance to the slaughter floor. Also dried blood was observed on the hallway side of the door leading into the parking lot from this area and also on the hallway side of the door leading into the "Cook Room" area of the establishment. Mr. [redacted] was immediately notified. These items were cleaned and sanitized. Noregulatory control action was taken. 9 CFR 416.2(b) states "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions."
