Citation: At approximately 1000 hours while performing the review and observation component of the Sanitation Performance Standards task in the storage room and hide room adjacent to the kill floor I observed the following deficencies.1.) There are several gaps measuring about 1/4 to 3/4 of an inch in diameter in the mortar joints and flashing around the door from the kill floor.2.) There is an accumulation of cobwebs in the rafters and ceiling of the runway to the rear exit door.3.) In the storage room there is an accumulation of dirt, debris, and old aprons on the floor. There are old rollers, gambrels, and an unused air curtain stored directly on the floor. There is an old refuse barrel with the bottom rusted out.4.) There is a metal shelf in the hide room that is rusted beyond repair. On the shelf there is an accumulation of old equipment, plastic gloves, paper, and debris.A check of the daily SSOP and the Plant Improvement Log found that these deficencies were not documented. This is a violation of FSIS regulations 416.1, 416.2(b)(1)(2), and 416.4(b). No tag applied. I notified Mr. [redacted] of the non compliance orally and in writing with this NR.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
