Citation: At 0800 hours while performing the recordreview portion of the Heat treated HACCP implementation verification procedure the following noncompliance was observed. The establishment's Heat treated HACCP plan states [redacted] under Form JP-3 was reviewed and no direct observation results were recorded. The record review portion was recorded in red ink. FSIS PHIS Directive 5000.1 dated 4/11/11 on page 66 under g. states “One or more of the following findings evidence that the establishment does not comply with 9 CFR 417.5(a)(3): ii. Establishment verification records do not document all verification activities or do not include the results of verification procedures.” 9 CFR 417.5(a)(3) states “Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.” No similar noncompliances were recently documented. No product was retained due to this recordkeeping only noncompliance. Mr. [redacted] was notified verbally of this noncompliance.
