Citation: At 0705 hours while performing the observation portion of the Sanitary Performance Standards activity the following noncompliances were observed. These items were observed following the establishment's pre-operational inspection. The ceiling tiles in the area in the center of the processing room were observed to have several dark colored specks and stains on them. Mr. [redacted] was verbally notified. He stated that he would have the ceiling cleaned over this weekend. The corner of the wall holding the wall mounted phone was observed to have fat particles from the previous production day on the stainless corner of this area from the phone down approximately six inches. Mr. [redacted] immediately had the area scrubbed with soap and green scratch pad then rinsed to restore sanitary conditions. The area under the small shelf on the surface eft stainless table used for weighing and packing products was observed to have fat and meat particles from a previous production day on the surface of the stainless table. Mr. [redacted] immediately had this area cleaned and sanitized. The red colored hose hanging on the wall near the sink area was observed to be coated with a dark colored substance. Mr. [redacted] was verbally notified and had the hose scrubbed with soap and water to restore sanitary conditions. The air curtain blowers at the entrance to the processing room were observed to have a dust colored substance starting to build up on them. Mr. [redacted] was immediately notified. Mr. [redacted] mentioned that the air curtains blowers and the ceiling would be cleaned over the following weekend. 9 CFR 416.2(b)(2) states "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions." 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product." No similar noncompliances were recently documented.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
