Citation: At approximately 0735 on January 27, 2012 after performing ante-mortem inspection and walking through the slaughter floor the following noncompliances were observed. There are cobwebs in thecorner of the wall and ceiling and cobwebs above the air curtain above the door way entering the inedible room. The rubber seal on the bottom of the cooler door does not seal properly to the door. The door that leads to the barn, the flashing is damaged in three different areas approximately 2"x 2" area for each section. Mr. [redacted] was verbally notified of the above noncompliance.

Regulation:

416.1 Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
