Citation: At 0705 hours while performing the Sanitation Performance Standards verification activity in the processing room area of the establishment the following noncompliance was observed. The white storage rack next to the scale area used to store knives, equipment, etc. was observed to be flaking white paint in various areas. No product was retained due to this noncompliance. This item was rejected using US reject tag no. B32481855. Mr. [redacted] and Mr. [redacted] were notified verbally. 9 CFR 416.2(b)(1) states "Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions." No similar noncompliance was recently documented.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
