Citation: At 0705 hours while performing the 01B02 procedure in the processing room area of the establishment after establishment personnel alerted IIC that their pre-operational procedures were complete the following noncompliance was observed. Pieces of fat and meat from the previous production day were observed on the floor area under and around the cryovac machine. Also a product residue build up was observed on the cooler door handles on both sides of the cooler door leading from the processing room to the cooler area. The residue was on the handle on the processing room side as well as on the cooler side of the door. This same door also had a product residue buildup from the bottom of the door to approximately 12 inches from the floor on the cooler side of the door. Mr. [redacted] and Mr. [redacted] were notified verbally. No regulatory control action was taken because these items were cleaned and sanitized immediately in the presence of the IIC. No product was retained due to this noncompliance because it was observed during pre-operational inspection's review and observation procedure. No similar noncompliances were recently documented. 9 CFR 416.2(b)(2) states "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions." 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
