Citation: At 0705 hours while performing the 01B02 procedure in the processing room area of the establishment the following noncompliance was observed. The area behind the cutting table facing the parking area of the facility was observed to have a blackish colored product residue. Also a few pieces of fat and meat particles from a previous production day were observed on the wall behind the table. Mr. [redacted] and Mr. [redacted] were notified verbally. Also the vents on the insect shields at the doors from the processing room to the outside were observed to have a blackish colored dust like substance on them. The ceiling over the grinding area was observed to have a few meat particles from the previous production day on it. Mr. [redacted] was notified of these noncompliances verbally. All the items mentioned were immediately cleaned. No regulatory control action was taken because these items were immediately cleaned. No product was observed to be affected by these issues. No similar noncompliances were recently documented. 9 CFR 416.2(b)(2) states "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
