Citation: At 0705 hours while performing the 01B02 procedure in the processing room area of the establishment the following noncompliance was observed. A build up of product residue from a previous production day was observed on the handle of the floor scraper and also the squeegee handle. Mr. [redacted] was immediately notified verbally. These items were rejected using US reject tags nos. B32481858 and B32481857 respectively. No product was retained due to this noncompliance because it was observed during pre-operational inspection and no product was present. These items were immediately cleaned and sanitized and the control action was removed at 0720 hours. 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product." No similar noncompliances were recently documented.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
