Citation: At 0710 hours while performing the 01B02 procedure in the slaughter floor area of the establishment the following noncompliances were observed. A light over the final wash/zero tolerance area was observed to be out. Also a light shield over the area of the slaughter floor in which the animals are hanging on the rail and starting to have the hides removed was observed to contain dead insects contained within the light shield. Mr. [redacted] and Mr.[redacted] were notified. No product appeared to be affected by this these noncompliances. No similar noncompliances were recently documented. 9 CFR 416.2(c) states "Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets." 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
