Citation: At 0715 hours while performing the 01B02 procedure in the processing room area of the establishment the following noncompliance was observed. The cord from the saw was observed to have a buildup of a dark colored substance on it. This plug was hanging on the wall near the exit to the dock area. Mr. [redacted] was notified. Also the small scale used to weigh ingredients and different food items was observed to have fat and meat particles from a previous production day under the area in which items are placed to be weighed. Mr. [redacted] was notified and this item was immediately cleaned and sanitized. No food products were observed to be effected by this noncompliance. No similar noncompliance was recently documented. 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
