Citation: At 0705 hours while performing the 01B02 procedure in the processing room area of the establishment after an establishment employee alerted the IIC that their pre-operational procedures were completed the following noncompliance was observed. The underside of the white table tops used for cutting meat were observed to have fat and meat particles from a previous production day on them. The top portion of the stainless frame of the tables were observed to have some fat and meat particles as well from the previous production day. These items were rejected using US reject tag no. B32675534. These items were brought to the attention of Mr. [redacted] Mr. [redacted] and Mr. [redacted] II verbally. Mr. [redacted] then rewashed and sanitized these items and they were released at 0800 hours by the IIC. No similar noncompliances were recently documented. This noncompliance was observed before the start of operations in this department. 9 CFR 416.4(b) states "Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
