Citation: On 1/27/2011 at 7:20 A.M. Mr. [redacted] came to the USDA office and advised me he was ready for pre-op inspection of the processing room. While performing a scheduled 01B02 the following noncompliances were found. A scabbard containing two knives was dirty with hair, blood and fat residue. The cryovac machine had packaging bags in it that had blood on them. On the floor by the grinder there were several meat and fat chunks left from cleaning the grinder. Mr. [redacted] was notified orally and in writing with this NR that these items are a violation of 416.13(c). Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. There was no product involved with this noncompliance. This NR serves as written notice that your failure to comply with regulatory requirements could result in additional regulatory and/or administrative actions as described in 500.4. Past Similar NRs - Previous Ineffective Plant Actions: A Flashlight will be used for all future SSOP inspections. NR: 55-2010 dated 12/27/2010
