Citation: On 1/27/2011 at 7:20 A.M. While performing a scheduled 01B02 the following scheduled 04B04 noncompliance was found. Upon entering the cooler I observed four packages of product, on the rack on the south wall, that had no identification. Mr. [redacted] was given the packages of meat and asked if he knew what they were. He correctly identified the product as beef skirt steak and labeled the product. Mr. [redacted] was informed that this was a violation of 317.1(a) "When, in an official establishment, any inspected and passed product is placed in any receptacle or covering constituting an immediate container, there shall be affixed to such container a label as described in 317.2" A review of the records for the last 90 days revealed no others noncompliances of this nature.

Regulation:

317.1(a) No official inspection legend or other official mark which has been previously used shall be used again for the identification of any product, except as provided for in paragraph (b) of this section.
