Citation: On 12/27/2010 at 7:20 a.m. I was asked by Mr. [redacted] if I had a pre-op inspection today. I replied, "that I did," and asked if the processing room was ready for inspection. I was told the processing room was ready for inspection. While performing a scheduled 01BO2 the following noncompliance was found. In the bottom of the augur canal there was meat scrapes and fat. Management was notified and the item cleaned, sanitized, and submitted for reinspection. The grinder passed the second inspection and management was allowed to start processing. Mr. [redacted] was notified verbally and in writing with this NR that this is a violation of 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. Review of past records revealed a similar NR on 12/20/2010. Past Similar NRs - Previous Ineffective Plant Actions: "A designee will be directly observing pre-operation sanitation duties for the next two weeks to prevent future noncompliances. NR: 54-2010 dated 12/20/2010
