Citation: On 12/20/2010 Mr. [redacted] came to the USDA office at 7:20 A.M. and said, "the processing room was ready for inspection." I proceeded to the processing room to perform a scheduled 01B02, and found the following noncompliances. The south wall had fat and meat residue about 12 inches above the cutting table level. There was meat residue in the augur of the grinder and on the inside of the cabinet of the meat saw, as well as meat and fat scraps on the floor. Management immediately cleaned and resanitized these items and the facility was reinspected and released for processing. This is a violation of 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. Mr. [redacted] was notified verbally and in writing with this NR that this is a failure to comply with regulatory requirements. A review of past records revealed no other noncompliance of this nature in the past 60 days.
