Citation: While performing an 05A02 at 10:15 a.m. the following 03B01 non-compliance was found. Review of the E.coli records revealed that no sample on raw ground beef had be taken for the third quarter of the year. Further investigation indicated that although ground beef had been produced several times during the third quarter no sample was taken by management to test for the presents of E. coli. Page three of the Hazard analysis clearly states that "[redacted]" This is a violation of 417.5(a)(1)"The establishment shall maintain the following records documenting the establishment's HACCP plan: (1) The written hazard analysis prescribed in Sec. 417.2(a) of this part, including all supporting documentation." Mr. [redacted] was informed that sampling results are part of the establishment supporting documentation. There were no other NR's of this nature in the last 60 days. This NR serves as written notice that your failure to comply with regulatory requirements could result in additional regulatory and/or administrative actions. You are hereby notified of your right to appeal this decision as delineated by 306.5 and/or 381.35 of 9CFR
