Violation: 416.13(c), 416.2(d)

Citation: At 10:45 a.m. while performing a 01C02 the following non-compliance was found. In the processing room I found condensation on the ceiling above the door on the south wall, above a processing table on the south wall , above the band saw and above the grinder. At this time the condensation was not dripping and there was no product contamination. Mr. was notified immediately and production stopped until the condensation was removed. Processing resumed once the condensation was removed. Mr. was notified orally and with this NR that this is a violation of 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. and 416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. Mr. was given this NR as written documentation of their failure to meet USDA requirements. No similar NR's in the past 60 days in this area.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
