Citation: On Wednesday 02/16/2011 at approximately 0830, the following was observed in the large storage room in the cutting room: Numerous items (buckets, cleaning supplies) are being stored throughout the floor area, also the items stored on the shelves on the storage rack are disorderly and comingled which is hindering the ability to perform adequate inspection of this area to assure insanitary conditions are not present. I notified [redacted] of this observation. No product was involved and no regulatroy control action was taken. This does not comply with regulation 416.2(b)(1); 416.3(b). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.3(b) Equipment and utensils must not be constructed, located, or operated in a manner that prevents FSIS inspection program employees from inspecting the equipment or utensils to determine whether they are in sanitary condition.
