Citation: On Tuesday 02/01/2011 at approximately 0915, the following was observed in the cooler next to the cutting room: There are two rows of lights in the cooler consisting of three sections of lights in each row. Three of the six sections of lights are not working. Adequate lighting is not available in this cooler. I notified [redacted] of this observation. No product was involved and no regulatory control action was taken. This does not comply with regulation 416.2(c). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.
