Citation: At approximately 0600, while performing
preoperational sanitation within the slaughter floor area, I found
the following noncompliances, after the plant had performed their
preoperational inspection, but prior to operation.
1. The brisket saw had product residue (fat,meat) on the blade and also on the casing.
2. The roller hoist had product residue (dried blood, hair) on the chain and the hooks.
3. The holding cooler door had a build-up of product residue (fat, grease) on both the inside and the outside of the door. The wall area around the door also had product residue and a black substance covering the majority of the area surrounding the door.
I immediately notified [redacted] and [redacted]
No tags were needed as these areas were cleaned in my presence. On reviewing the plants pre-operational sanitation records I found that none of these noncompliances were found or documented.
The above are a violation of 9CFR 416.4(a), 416.13(a), and your SSOP Plan.
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
