Citation: While performing pre-operational sanitation at 09832 on 7/26/2011, the following noncompliances were found at approximately 0605 hrs: 2 Blue lugs used for storage of product were found with muscle and fat particles on the shipping table. The particles ranged in sizes of 1/6 to 1/8 inch and were found on the outside of the top lug and the inside of the lower lug, as the lugs were nested. Two more lugs were found in the processing area heavily scared with deep abrasions on interior surfaces of the lug and un-cleanable. I immediately notified Ms. [redacted] of the violation of 9 CFR 416.4(a), 9 CFR 416.13, and of their own written SSOP. At approximately 1130 hrs I reviewed the plant SSOP pre-operational sanitation record and found that the plant personnel had failed to record all deficiencies found during their pre-operational sanitation monitoring. I notified Ms. [redacted] of the violation of 416.16(a).
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.
416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOPís and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOPís as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOPís shall authenticate these records with his or her initials and the date.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
