Violation: 416.13(c), 416.4(a)

Citation: While performing preoperational sanitation inspection at approximately 0600 hrs, at establishment 09832 on 5/24/2011, the following non compliances were found in the shipping / staging area. These noncompliances were found by FSIS inspection personnel after the area was released by plant management but prior to operation. Four knives and a Jarvis well-saw at the beef breaking and rail staging area were found with fat and muscle debris from previous production on product contact surfaces of each blade and handle. The hoist hook and cable attaching the hook were also covered with what appeared to be animal fat from previous productions. I immediately notified Ms. of the violation of 9 CFR 416.4(a) and 416.13(c). No USDA rejection tags were issued as I remained in that area until corrective actions were implemented. Reinspection of the recleaned and sanitized equipment was performed and the equipment was released at approximately 0610 hrs.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
