Citation: At approximately 0600 hours, while performing ISP code 01B02 (preoperational sanitation), I observed the following noncompliances, in the processing room: 1. Thirteen blue tubs were observed that had a build-up of residue (fat,grease) on the top edges and also the bottoms of the units. 2. Five gray square containers were observed that had a build-up (fat, grease) on the top edges of the units. 3. Both Pattie machines had product residue (fat, meat) in numerous areas throughout the units. Rust was observed in various areas also. I informed Mr. [redacted] (Supervisor) of the noncompliances. The tubs and containers were removed from the floor and cleaned and then released. The Pattie machines were tagged with USDA tag #B37853035 at 0600, after cleaning they were released at 0630 hours. These noncompliances are a violation of 9CFR 416.4(a). 416.13(c), and your SSOP Plan. Past Similar NRs - Previous Ineffective Plant Actions: The retraining of employee was either not implemented properly or ineffective and preventing unclean areas. NR: 1-2011 dated 1/11/2011 All above mentioned areas are product contact areas.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
