Citation: At approximately 1040 hours, while verifying CCP [redacted]), I observed the following noncompliance. Carcass number 6 (23GR5738) had ingesta (straw) on the inside of the rib cage and the brisket area of both sides of the carcass. This material was too numerous to count and ranged in sizes of 1/8 inch to 1/2 inch in size. I informed Mr. [redacted] (slaughter floor lead person) of the violation of 9CFR 310.18, 417.5(a), and CCP#1B. Mr. [redacted] gave verbal corrective actions that the affected carcass would be retrimmed. After the carcass was retrimmed, I reinspected and released the carcass. Past Similar NRs - Previous Ineffective Plant Actions: The training of employee was either ineffective or not properly implemented. NR: 4-2010 dated 10/4/2010. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
