Citation: While performing an unscheduled 03J01 the following noncompliance was found at establishment 09832 on 10/04 2010: Carcass # 7865 and carcass # 8317, the last two cattle slaughtered were found with what appeared to be extraneous materials, shards of grass and hair. These materials were found on the brisket area as well as the front quarter legs of each carcass. Carcass # 7865 had a piece of hide approximately 1 inch long by 1/8 inch wide attached to the under side of the front shank. The extraneous materials ranged in sizes of 1/6 inch to 1/4 inch in size. I immediately notified Mr. [redacted] (slaughter floor lead person) of the violation of 9 CFR 310.18. Mr. [redacted] gave verbal corrective actions that the affected carcasses would be trimmed, rewashed, and sprayed with FMC 323. After Mr. trimmed the carcass I re-inspected and released the carcasses. I did not issue a Retain tag as I remained in the area until all corrective actions were taken.
310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
