Citation: At approximately 945 hours, while reviewing the establishment's HACCP Records, executing the Record Keeping Component and completing the review and observation procedure, for the period of 5/28/12 to 6/1/12, in order to verify that the establishment was meeting the regulatory requirements of regulation 417. The following non-compliance was observed while reviewing the records for the CCPB1 (temperature of the product for raw-intact HACCP plan): I observed establishment failed to document the verification procedure such as: Calibration of hand held thermometer at the frequency specified in the HACCP plan. This is a failure to comply with the HACCP plan which clearly states: [redacted] There was no documentation to show that the activity was performed at the frequency specified in the HACCP plan. I immediately notified plant management Mr. sanitation manager of my observation. I also informed plant management at this meeting that continued failure to comply with these regulatory requirements will lead to further enforcement actions. This is a failure to comply with the following regulations: 9 CFR 417.5 (a) (3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made. 9 CFR 417.4(a) (2) (i) the calibration of process monitoring instruments;
