Citation: On Tuesday, October 11th at approximately 2:00 p.m. while conducting a HACCP Raw-Intact procedure, the following non-compliance was noted: The establishment has an established Critical Control Point (CCP) of less than or equal to [redacted] degrees for the temperature of stored product. [redacted]. The establishmentís Hazard Analysis Master Sheet states that [redacted] However, my review of records revealed that the last thermometer calibration was completed on September 26th, 2011. Therefore, on the week of October 3-7 there was no thermometer calibration performed. I notified Plant Owner/Manager Mr. Gerald Jones and Sanitation Manager Mr. [redacted] of this non-compliance.

Regulation:

417.4(a)( 2)(i) Every establishment shall validate the HACCP planís adequacy in controlling the food safety hazards identified during the hazard analysis, and shall verify that the plan is being effectively implemented.
