Violation: 310.22(f) (1)(i), 310.22(f) (1)(ii), 417.4(a)( 2)(ii)

Citation: While on the kill floor after the plant had finished killing cattle that were over 30 month or over in age. I observed the plant start killing steers that were under 30 months of age. The plant states [redacted]. The plant did not perform this task as written in the plants BSE program. The plant started to kill the steers and than preceded to split the first carcass. After the plant finished i attached retained tags to both sides of the carcass, the tag numbers were B347820507 and B34782508. After tagging the animal Gerald Jones ( plant owner) inquired if the steer was over 30 months and i informed him that it was not and explained what i had observed and that the plant was not performing the task per their BSE program and the SRM's would have to be removed before the carcass could be shipped to Warrington farms for fabrication. Mr. Jones than went to the kill floor and told his employee's that they were to make sure that all equipment used to slaughter these animals was cleaned and sanitized.

Regulation:

310.22(f)(1)(i) Sanitation of equipment used to cut through specified risk materials. If an establishment that slaughters cattle, or that processes the carcasses or parts from cattle, does not segregate the carcasses and parts from cattle 30 months of age and older from the carcasses and parts from cattle younger than 30 months during processing operations it must: Use dedicated equipment to cut through specified risk materials;

310.22(f)(1)(ii) Clean and sanitize equipment used to cut through specified risk materials before the equipment is used on carcasses or parts from cattle younger than 30 months of age.

417.4(a)(2)(ii) Ongoing verification activities. Ongoing verification activities include, but are not limited to: Direct observations of monitoring activities and corrective actions;
